Grapes: 100% Chardonnay Type of soil: Calcareous, rich chalk in fossils of belemnites, mollusc of the secondary era. Our wine growing culture is respecting the natural environment; followed by ‘Réseau Magister’ since 1991. Vinification: Alcoholic and malolactic fermentation in thermo regulated containers. Champagne produced from the 2014 harvest. Bottled in April 2015; bottles conditioned on wooden shelfs during 5 years. “Remuage” (riddling) before disgorging Dosage: 4 g/l Degustation Straw gold colouring Perfumes: Its delicate aromas of fern are combined with blossom, straw and dried fruit. The mouth is delicate, fresh and vivacious, with a very long ending. Champagne surprising by its freshness and the finesse of its bubbles. To be served as an appetizer with blinis of smoked salmon, or with oysters. |
