After dosing the cork will
be pressed on the bottle, which is the start of a new
phase in the aging process. As soon as the cork is
arranged, it is covered with a capsule, and a ‘muselet’
(iron wire that holds the cork in the bottle). The bottles
are then shaken, and their brightness is checked. They are
then placed into the cellar again; within a few months
they will be sold now. Before the bottles leave our
basement, they are 'dressed': the cork and the ‘muselet’
are covered with a preformed aluminium foil, and fixed
with a colourful band. On the bottle will be two labels:
one at the front and one at the back. They contain
interesting information and all legal or other mandatory
particulars. In accordance with the regulations, champagne
is always sold in the bottle in which it is manufactured.
